The season has just begun at County Line Harvest, and we're really enjoying the first pick of arugula and red frill. Harvested this morning, we have some of these beautiful greens in our treasure boxes and large bundles, and plenty more to come for everyone soon! While David and I enjoyed a citrusy arugula salad we talked about what makes Arugula his favorite green to grow. He said, "We've played around with different varieties and the varietal we grow is Esme. It's really exciting to watch it grow, because it's growth cycle is 21 days. It's so amazing to put a seed in the ground and just watch it pop! Other crops take a really long time. This small little seed packs such a punch and it's so vibrant green, and when you eat it, you just taste it, you feel it. When you eat packaged arugula it's been triple washed, which I get, but on our small farm, we have this really fresh harvest that we're not triple washing it, and that's why it has so much flavor! That's the difference between that and getting arugula at the store. When you get this arugula and you enjoy it within a few days it's really good! I always find that arugula is so versatile. You can make salads, you can put it in a wrap, cook with it, mix it with other greens. It's a nice, delicate green and it's really easy to do anything with it. One of my favorite salads is shaved fennel and arugula, with a simple vinaigrette and shaved pecorino." |
